Ramon Tavarez realized a life-long dream of opening his own restaurant. He was born in the Dominican Republic and from a young age enjoyed creating food with him mother and grandmother. He came to the United States and started working in fine dining restaurants. Ramon was the manager and Luca West in Westlake and was a server at Luca Italian Cuisine until he opened Pica Pollo West in 2022.
Ramon brings the flavors of his Caribbean heritage cooking fried chicken (an island favorite), with tostones and even some deserts, like flan and papaya candy. Using only the freshest ingredients, everything is made on site.
Cristina, Ramon’s wife, can be seen at the restaurant greeting guest and helping Ramon. It is a labor of love and they welcome everyone to come and taste their flavors of the Dominican.
